Who doesn’t love celebrating Republic Day in schools, apartments and colonies? And after the flag hoisting and other celebrations, it’s time to dish out something with a hint of the tricolour for the kitchens.

Rashmi Pandey, a resident of Uppal and chartered accountant student, says, “Every year during Republic and Independence Day, we have colony get-togethers. Women adorn their front yards with colourful muggus and later, while we meet for the flag hosting, everybody brings some sweets.
My mother usually makes the tiranga barfi. It’s your simple naryal barfi, which is
divided in three parts. One is left plain, while the remaining two parts are coloured green and saffron, using food colouring. We also make paranthas with tricolour stuffings — carrot for orange, spinach and peas for green and cauliflower for white. After cooking them, you slice them evenly for the stuffing to show and plate them to resemble the Indian flag.”
Henna Loungani, a techie who resides in RK Puram, goes the gourmet route every Republic Day. “It’s sweets galore in our apartments,” she admits, adding, “The list goes on from tirangi kalakand to barfis. This year, for our Republic Day potluck
dinner, I’m thinking of making a tricolour cheesecake. With orange jam, mint jelly and cream. If you plan on inviting kids home, then you can serve them nachos or khakras with mint chutney, teekhi tomato chutney and mayo dip.” Not just colonies and apartments, even students get their mommies to pack Republic Day snacks.
Homemaker Jaiwala Sarita Issac plans to fill her kid’s tiffin boxes with either tricoloured sandwiches or tiranga dhoklas as part of the Republic Day snacks. “They are the easiest to make in the morning — fuss-free and a big hit with kids.”
